Hotel Bidasoa was founded in 1989 by Mauricio Sanz and María Elena Raab, a couple who also own Pinpilinpausha, the most traditional restaurant in Santiago.
It is named after the Bidasoa River, the natural border between the French Basque country and the Spanish Basque country, the land where Mauricio was born and had to leave because of the Spanish civil war.
The Hotel continues to be inhabited and operated by the Sanz family, who seek and are committed from the soul that both the hotel and its two restaurants are platforms for transformation.
In addition, they are places where their clients and collaborators can expand and connect with the best of themselves, thus forming a large community of people who share the same values around awareness and respect for others, care for the environment and the good cultivation of the Art of Living.
Bidasoa won last 2023 the Green Impact award for being the most energy efficient building, 95% of its operation based on renewable energies thanks to Aerothermics, the reserve of electrons in wind and solar power plants, the management of garbage and waste, and above all, for having Casa Sanz, one of the two restaurants designed to create the gastronomy of the future, which will undoubtedly be based on plants.
